The Rusty Oven is a family-run pizzeria tucked away behind Patsy Dan’s Bar in the centre of Dunfanaghy, County Donegal. It is deliberately easy to miss from the street, and that is part of the appeal. Visitors make their way through to the rear of the bar, pass Muck n Muffins and arrive in a lively secret-garden setting where wood fire, sourdough, music and an unmistakably Donegal sense of informality come together.
The business began in 2013 when the family pulled a small trailer into Patsy’s yard and started making pizza under the stars. The early setup was gloriously improvised — customers ate in an old cow shed and everyday kitchen equipment was pressed into service — but the idea developed year by year into the distinctive restaurant that operates there today.
Sourdough is at the centre of everything. The Rusty Oven makes its dough by hand on site using organic stone-ground flour, water, sea salt and a natural starter. The dough goes through a 72-hour fermentation process before being shaped and fired in the wood-burning oven. The same bakehouse approach also extends to handmade sourdough bread, reflecting a genuine interest in long fermentation rather than simply using “sourdough” as a menu description.
