Ashford Castle is one of Ireland’s most celebrated places to stay. Set within 350 acres of gardens, ancient woodland and parkland on the shores of Lough Corrib near Cong, County Mayo, the castle has stood here for more than eight centuries and today operates as a five-star luxury hotel within the Red Carnation Hotel Collection.
The story of the estate stretches back to 1228 and spans medieval Ireland, later expansions and the Guinness family era, when Ashford became one of the great private estates of the west. The castle’s long history remains visible in its stone walls, towers, grand halls, fireplaces, wood panelling and architectural details, but the modern experience is defined by the way those historic surroundings have been restored and combined with highly personal contemporary hospitality.
Ashford Castle has 83 individually designed rooms, suites and The Boathouse. Interiors combine antique furniture, custom carpets, fine fabrics, chandeliers and original architectural features with modern comforts. The Staterooms occupy some of the oldest parts of the castle, while The Boathouse offers an especially private one-bedroom retreat on the edge of Lough Corrib, with its own garden, terrace, bicycles and 24-hour butler service.
The scale of the estate allows a stay to become much more than accommodation. Guests can take part in falconry at Ireland’s first School of Falconry, ride through the woodlands on horseback, fish on Lough Corrib, try archery or clay shooting, cycle through the estate, take a lake cruise, walk the woodland trails or play the nine-hole parkland golf course designed by Eddie Hackett. Many of the experiences can be tailored for couples, families or private groups.
Golf has its own place in Ashford’s history. The estate’s nine-hole course occupies the original deer park, and legendary Irish golfer Christy O’Connor Senior began his professional career there in 1947. Green fees are complimentary for hotel residents, while non-residents can also book the course subject to availability.
Dining is a major part of the Ashford experience. The George V Dining Room provides the castle’s formal fine-dining setting, while The Dungeon offers a more relaxed bistro-style experience in the lower levels of the castle. Cullen’s at the Cottage serves locally inspired food and seafood from its thatched cottage setting, while The Drawing Room, the Connaught Room, The Prince of Wales Bar and the historic wine cellars provide everything from light lunches and Afternoon Tea to cocktails, whiskey tastings and private wine experiences.
The food programme places particular emphasis on seasonal produce from the west of Ireland. Ingredients are sourced from local artisan producers, foraged from the estate and grown in Ashford’s Kitchen Garden, helping connect the dining experience to the landscape surrounding the castle.
The Spa at Ashford Castle is another destination in its own right. The spa includes treatment rooms, a relaxation pool overlooking Lough Corrib, steam facilities and a fitness suite, and was named Ireland’s Best Hotel Spa at the World Spa Awards in 2025 for the tenth consecutive year. Spa retreats and treatments can be incorporated into a stay throughout the year.
Families are particularly well catered for. Ashford describes itself as a multi-generational resort and offers family rooms, interconnecting accommodation and a wide programme of activities suitable for children and teenagers. Weddings and private celebrations can take over the entire castle.
